Friday Faves: New Recipe Favorites - Fish

Baked Tilapia with Fresh Herbs

Light, quick, only a few ingredients, and majorly delicious.  This has earned itself a regular spot on our dinner rotation.

Ingredients:
  • 4 (6 to 8 ounces each) skinless tilapia fillets 
  • Coarse salt and ground pepper 
  • 3 tablespoons light mayonnaise 
  • 1/2 cup finely chopped parsley 
  • 2 tablespoons finely chopped fresh dill 
  • Lemon wedges, for serving

Broiled Tilapia Parmesan

A simple tilapia recipe using mostly ingredients you already have in your pantry.

Ingredients:
  • 1/2 cup Parmesan cheese
  • 1/4 cup butter, softened
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 2 pounds tilapia fillets

Jeannie's Kickin' Fried Fish

Another simple tilapia recipe, with just the right amount of kick and crunch.

Ingredients:
  • 1 pound tilapia fillets, rinsed and patted dry
  • 1 egg
  • 1/3 cup milk
  • 1/2 cup Italian seasoned bread crumbs (such as Progresso®)
  • 2 teaspoons roasted onion flakes
  • 2 teaspoons minced garlic
  • 1 teaspoon blackened seasoning (such as Old Bay®)
  • 2 pinches crushed red pepper flakes (optional)
  • 1/4 teaspoon freshly ground black pepper, or to taste
  • 1/4 teaspoon freshly ground sea salt, or to taste
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons butter
