After hitting up some Black Friday sales, I am wide awake this morning and thankful that it is a Friday and I am at home on my couch :). LOVE four-day weekends.
In honor of the four-day weekend and Turkey Day, I wanted to share a great recipe I just tried for the first time. This is a pumpkin bread recipe that has been passed through Nik's family from his great-grandmother (GG). The recipe was faxed to me by my mother-in-law from a recipe card in GG's hand-writing. I made it the other night, and not only was it super easy, but it was also mouth-wateringly delicious. Had to share with you all.
GG's Pumpkin Bread
Yield: 3 Bread Loaves (Great for Gifts!)
3 Cups Sugar
1 Cup Vegetable Oil
1 1/2 Teaspoons Salt
1 Teaspoon Cinnamon
1 Teaspoon Nutmeg
2 Teaspoons Baking Soda
2/3 Cups Water
2 Cups Canned Pumpkin
3 1/2 Cups Flour
1 Cup Finely Chopped Nuts (Optional)
Heat oven to 350 degrees.
Mix all ingredients together, then distribute evenly into 3 greased bread-sized baking pans (pans shouldn't be much more than half full).
Bake for 45 - 60 minutes until toothpick stuck in the middle of the loaves comes out clean.
